How would one go about changing the text of these buttons? Also, how about adding a confirmation dialog when one is clicked?

Unsupported jQuery would prob be your best bet for changing the display.

Confirmation dialog is probably doable, but also difficult entry point to capture.

How about removing them with a workflow or script and effectively replacing them?
